Currently there are some 30 shires in Scotland deriving from the ancient ‘clan’ or ‘family’ divisions throughout its long history. Because of this borders and territories were somewhat more fluid than those in England during a similar period.
Bearing this in mind it is not always easy to pin certain dishes or foods to one particular area or region. Nevertheless I shall attempt to link up specific items to specific regions as they come along.
