Lafayette Pudding

The weeks following Christmas and its over indulgences can be very deflating, but the opportunity arises for some small, interesting dishes.

Dishes that have nothing to do with turkey, chestnut stuffing, gammon (either baked or boiled), roast potatoes, mince pies, brandy sauce and Plum Pudding!

It is a time for thick, wholesome soups, light(er) puddings, fresh fruit and vegetables.

This is not perhaps a recipe that fits all of those criteria but being made in dariole moulds it looks smaller and is therefore, by definition, less bad for you!
