These two recipes are from my own files. On leaving college I went traveling and as a result I had the opportunity to gather together the best of the local foods. These are two classic Spanish dishes that have had many mimics and ‘versions’ over the years.
To a degree I have myself tweaked them to suit my own personal taste but they retain the spirit of the original .
Both very much ‘food of the people’ their influences are not those of the tables of the wealthy but of the land and the sea close at hand.
