The King of Fish, the Fish of Kings

A fish of fine texture and firmness, Halibut can range in size from a simple plate size fish to a monster the size of a small coffee table!

It has a superb flavour and the larger fish easily lend themselves to the cutting of classic supremes and goujons. From this particular selection I would personally reccomend the Banana Fish Royal.


So, a few recipes, from the fish book, using this elegant fish to whet the appetite!
